phonoLapse is a free desktop app for Mac that lets you create audio time-lapses. In case you fancy making crazy long files, the max size of your final sound can be 7 minutes. Also, there’s always a chance it might bomb out after you’ve been recording for days (and that would be sad), so to be safe you can export every now and then and select “continue recording” in the popup.
