There are a ton of conversion profiles available for different types of devices, including the iPhone, iPod Touch, iPad, Xbox 360, Playstation 3, PSP, Zune, etc. This converter also comes with a video editor that lets you trim and crop your videos, adjust some of their properties and even add watermarks to your clips.
Although this application is marketed towards Flip camcorder users, it can open pretty much any video file and the output format support is excellent, so you can use it for other conversion tasks as well.
